Bobby “Doc” Deshotel reminisces about the near half a century he has spent as an Evangeline Parish School Board Member by looking through a scrapbook that his granddaughter Sarah made for him. Most people in South Louisiana know of two main trinities. The first of which is the Holy Trinity of the Father, the Son, and the Holy Spirit; and the second is onions, celery, and bell peppers.
